Cooking (or freezing?) Oppo: Nearly Instant Ice Cream

Nadia Hussain, past winner of The Great British Baking Show/Great British Bake Off and all around nice person, has a new cooking show on Netflix/The BBC Called “Nadia’s Time To Eat”. It focuses on quick meals and prepare-ahead dishes. In episode two she shares a recipe for ice cream that is so simple and quick and cheap you’ll hardly believe it.

Made it with cardamom first, as in the recipe, but any flavor that won’t cause the whipping to fail/colapse should be as easy as stirring it in... Next is coffee!

It works great. Here’s the recipe in its entirety. I have not left anything out, it really is this simple.

Ingredients:

  • 397g/14oz tin condensed milk
  • 500ml/18fl oz double cream (heavy whipping cream in the US)
  • 5 cardamom pods, seeds removed and crushed (don’t be an idiot and use black cardamom, this should have green)

Put the condensed milk, cream and crushed cardamom seeds into a bowl. Whip until soft peaks form when the whisk is removed from the bowl, then transfer to a freezer-safe tub and level the top. Freeze.

That’s it.

Done.

It’s a little fluffier and less dense than we’re often used to in ‘Murrica, but it’s tasty and easy as fuck. Again, anything you can add that won’t collapse the whipped cream should be fine for flavor/texture. I think you’d have trouble adding chocolate, though maybe some Hershey’s syrup would work? But pretzels, salted caramel bits, various chopped whole or pureed fruits, should all be easy enough.
