I continue to try to improve my gumbo roux. I had a decent hang of it before my daughter’s Celiac diagnosis. Now I’ve got the right flour substitute for this particular job (sweet white rice). I think I gotta just say fuck it and burn a batch, just to see how far it can go before it goes bad. But I haven’t yet. So here’s my progression this time. Could have gone a bit farther. As you can see from the top pic, got a bit further to go.
