In order to keep my mind off things today, I decided to spend it chopping, cooking, and stewing.
Actually ended up using 2 bulbs of garlic. Step 1: start chopping.
Step 2: while browning onion and shallots, roast some peppers, then peel.
Step 3: brown garlic with green onions while shallots and big onions are cooking down.
Step 4: reduce a bunch of homemade chicken stock.
Step 5: add peppers and crushed tomatoes to onions and shallots.
Step 6: season and brown ground chicken, chop and brown artichokes.
Step 7: blend sauce sideways
Step 8: grab a bunch of the last basil and parsley from the garden, chop and add to sauce back in the pot, add in ground chicken, and a generous pinch of Asiago. Also added smoked paprika, a dash of cumin, s&p, herbs de Provence, possibly some other shit I’m forgetting
Finally, let it slowly simmer and continue to reduce until it’s time to make some pasta, and figure out how to actually work until it’s time to feed.
