Since this place is going down in flames, might as well mention that in the past few months I’ve settled back in to being a mostly vegan vegetarian instead of a full vegan. I still cook many vegan things but ultimately decided I didn’t want to go through the hassle of ensuring every last packaged food item was without eggs or dairy, and sometimes I just want to eat an everything bagel omelet with gardein veggie breakfast sausage and pub cheese sandwich.
My thought process was, “well the bottom of that small skillet is kinda sorta like the size of a bagel...” so I made a sandwich-y thin omelet. It is in fact kinda sorta like the size of the bagel, if one is charitable with what qualifies as kinda sorta like the size of something.
