Meal-In-One Soup or, as I like to call it, Dad’s Soup of Awesomeness™.

This is a recipe that I got from my step-mom many years ago, and it used to be one of the few things that my boys would eat regularly. Nowadays, not so much, but I still make it because I like it. It’s good for a cold grey day, and stupid easy to make. Prep is maybe 30 minutes.

  • 2 lbs ground beef

  • 2 tbsp oil (I omit)

  • 1/2 tsp salt

  • 1/4 tsp each black pepper, basil, oregano, savory

  • 1 pkg dry onion soup mix

  • 1 C each celery and carrot slices

  • 1/4 C minced celery leaves

  • 1/2 C dry split peas

  • 6 C boiling water (I do not boil first)

  • 1 tbsp soy sauce

  • 1 can tomato sauce

  • 1 C elbow macaroni

Brown ground beef, drain.

Throw everything in the pot, and heat it up. I like to let it simmer for an hour or so.

Add the noodles. I usually do more than a cup. Also, I used to cook the noodles in the pot with everything else, and that meant I had to add extra water and the noodles tended to come out overcooked and mushy. This time, I’m going to cook the noodles separately to a nice al dente and then add them prior to serving.

Top with grated parmesan cheese.

Goes great with fresh cornbread.
